Hello Healthy Friends -
School started for us yesterday, but I am still in a summer cooking frame of
mind! I will be making the colorful Squash Parmesan Casserole with the
beautiful squash and zucchini that were in my CSA box yesterday. It's the
one with a little bit of Parmesan cheese and turkey bacon.
I have talked to several of you who are wanting to "detox" again - also
referred to as "re-tox" - when you do it again and again! :) I will be
adding a new detox entrée: Vegetarian Stuffed Bell Peppers. I saute' veggie
burgers, tomatoes, onions and other vegetables together and then stuff the
mixture into roasted green bell peppers. I will do a veggie stir-fry and
make Faux-Tato Soup as well. (I will be posting more info on Detoxing later today!)
If you are interested in the regular menu, I am bringing back a salad that I
haven't done since last summer: Southwestern Fajita Chicken on Romaine with
Black Bean Salsa. This entrée is very filling and flavorful.
Pick-up will be Monday, Aug. 15th after 10 AM. Delivery to PPE will be at
11:30.
