Menu For Week of Aug. 22nd/My farm box runneth over!

Hello Healthy Friends -

My CSA box from Avalon Acres (CSA stands for Community Supported Agriculture) was larger than usual when I picked it up yesterday! It was brimming with beautiful, organic tomatoes, cucumbers and peppers....three of the main ingredients in Gazpacho. My Gazpacho will be on the menu this week and it is made with all fresh ingredients. It absolutely "tastes" like summer!

Another good summertime side is on the menu too: Spinach & Strawberry Salad With Toasted Almonds & Poppy Seed Dressing (low fat/low sugar of course!). The recipe is my mom's and she has served it at dinner parties for as long as I can remember. She used to worry that it was "too frilly" for men, but over the years many a burly man has asked for second and third servings of it!

Rounding out the summer sides is the Creamy Squash Casserole. It is the one with fat-free cream cheese and mild green chiles. I have been known to put some on a plate with a big stack of fresh, sliced tomatoes and consider it a meal!

Pick-up will be Monday, Aug. 22nd after 10 AM. Delivery to PPE will be at 11:30.

Menu For Week Of August 15th/New Detox Entree

Hello Healthy Friends -

School started for us yesterday, but I am still in a summer cooking frame of
mind! I will be making the colorful Squash Parmesan Casserole with the
beautiful squash and zucchini that were in my CSA box yesterday. It's the
one with a little bit of Parmesan cheese and turkey bacon.

I have talked to several of you who are wanting to "detox" again - also
referred to as "re-tox" - when you do it again and again! :) I will be
adding a new detox entrée: Vegetarian Stuffed Bell Peppers. I saute' veggie
burgers, tomatoes, onions and other vegetables together and then stuff the
mixture into roasted green bell peppers. I will do a veggie stir-fry and
make Faux-Tato Soup as well. (I will be posting more info on Detoxing later today!)

If you are interested in the regular menu, I am bringing back a salad that I
haven't done since last summer: Southwestern Fajita Chicken on Romaine with
Black Bean Salsa. This entrée is very filling and flavorful.

Pick-up will be Monday, Aug. 15th after 10 AM. Delivery to PPE will be at
11:30.

Menu For Week of August 8th

Hello Healthy Foodie Friends -

We had a good time with my husband's family in North Carolina, but it feels
good to be home! I am always ready to get back in the kitchen after I've
been away for awhile.

Because I am getting a late start on grocery shopping and cooking this week,
I will just do a pretty standard menu. Look for new items on the menu over
the next few weeks. I get especially inspired as school begins and Fall
approaches!
